Our long grain (vegetarian) rice is made with veggie broth, tomatillo-cilantro sauce, butter and fresh lime juice for a perfect balance of natural citrus and sweetness. It’s gently cooked al dente for a tender bite and to perfectly soak up our sauces. (No wonder some say it’s their favorite part of every Costa meal.)

Fresh from farms in the Dakotas and made from scratch each morning. Our (vegetarian) beans are seasoned with green bell peppers, cilantro, garlic and our secret bean spice. Then they’re patiently simmered (never boiled) to gradually convert the starch to sugar. This makes Costa beans naturally sweet, as well as perfectly plump and tender (not mushy or milky) with skins beautifully intact.

Our proprietary recipe makes Costa chips different (and better) than all others. Made from six-inch corn tortillas that are air dried for 10 hours at 52 degrees. Next, they’re cut, briefly fried to be light as air, and finished with salt & fresh-squeezed lime. They’re the perfect dipper chips for our salsas, all of which are house-made from farm-fresh produce.

One of our best recipes! Made with a mirepoix of carrots, onions and a touch of spice in homemade chicken broth with rice. Macerated corn tortilla strips add a hint of corn and starch that gives the broth body. Finished with cotija cheese, crispy chips, guacamole and salsa fresca for a wonderful combination of hot & cold, creamy & crunchy, salt & acidity.
