How to Fold the Perfect Burrito
We make over 10,000,000 tortillas each year in our Costa Vida kitchens. Every morning we create the dough from scratch and grill the tortillas to order. Most of our tortillas are made into smothered burritos, and we roll thousands of fresh burritos everyday. Our team takes pride in creating a perfect burrito for each guest and we’ve discovered a few tricks while working toward that goal. Today we’re sharing our tips to folding the perfect burrito.
Start with a fresh tortilla
We use a warm, grilled tortilla to wrap our burritos. Cold or dry tortillas can crack during rolling, so it’s important to use a fresh, warmed tortilla. In your kitchen, heat a large frying pan on medium-high heat and grill your tortilla for a several seconds on either side until warmed through.
Layer, layer, layer
Sure, the burrito fillings will be rolled into one, but the way you layer matters. Start with rice. The rice absorbs the sauce from beans and protein and prevents the tortilla from becoming soggy. Start with rice, then layer the beans, protein, sauce, and cheese.
Careful with the filling
At Costa Vida, we’re not shy when it comes to stuffing our burritos. We want every bite to have the perfect balance of homemade rice and beans, tender protein, and savory sauce. When you place the filling on your tortilla, layer it in the middle, but leave a few inches of tortilla on either side.
Fold and roll
Once your filling is in place, fold the tortilla in half, fold in either side of the tortilla on top of the filling, and roll toward the opening. Make sure you place your rolled burrito on a plate with the seam side down. We found an illustration at chowhound.com to help teach this technique.
Smother and enjoy!
When your burrito is rolled and plated, the final step is smothering with homemade sauce and cheese. At home, place your burrito under the broiler for a few minutes on an ovenproof plate or baking sheet. Remove the burrito when the cheese is fully melted.
