Costa Vida Steak Marinade Recipe

For many Costavidans, Labor Day weekend is the last summer holiday. This weekend is a chance to say goodbye to summer and welcome the new school year with a celebration with friends, family, and of course food. At Costa Vida, no summer cookout is complete without premium protein grilled to perfection, so we’re sharing this steak marinade recipe for you to enjoy over the long weekend!

This simple steak marinade combines fragrant spices, subtle jalapeño heat, and a squeeze of lime for bold Mexican-inspired flavor brought to life on your grill. Just like our chicken marinade recipe, this can also be easily doubled or tripled to feed a large crowd. 

The key with marinading steak is to let it marinate long enough to take on the flavors and tenderize the meat. Anytime you add salt to beef, the salt acts as a conditioner and tenderizer. This allows the other ingredients in the marinade to make your steak more juicy and flavorful. We recommend using 100% Angus beef, just like we do in our restaurants, for the most tender, juicy finished product.  

Steak Marinade Recipe


3 lbs cleaned, fresh sirloin steak, divided into 5-6 oz portions

½ cup pure olive oil

1 Tablespoon fresh garlic, minced

1 Jalapeno, minced

1 Tablespoon Kosher Salt

1 Tablespoon ground cumin

2 Tablespoons chili powder

Juice of 2 Limes


Combine all ingredients, except the steak, in a large mixing bowl. Whisk to combine completely. Using clean hands, tongs, or a rubber spatula, add the steak and gently mix well to ensure all pieces are well coated with the marinade. Cover bowl with plastic wrap (or pour steak and marinade into a large gallon-size Ziploc bag). 

Let rest in the refrigerator at least 2 hours. Fire up the grill, cook to your desired doneness, and let rest 10 minutes before slicing against the grain. We recommend trying one of our favorite flavor combinations below!

  1. Beef or steak with enchilada sauce
  2. Chicken or steak with fajita vegetables, guacemole and sour cream
  3. Raspberry chipotle chicken salad with HVR ranch dressing
  4. Steak tacos with corn tortillas, lettuce, cotija cheese, spicy salsa and lime
