Costa Vida Smother Recipe

We’ve been shouting it from the rooftops – have you heard the news? The smother is now included on all Costa Vida burritos! No more choosing between smothered or unsmothered. From now on the struggle will be which smothering sauce to order. Choose between our homemade red enchilada, roasted green chile, or tomatillo cilantro smothering sauces. Who’s ordering a burrito right this second?

To celebrate the included smother, we’re sharing our recipe for a roasted vegetable smothering sauce. Make homemade burritos and enchiladas at home with your family and don’t forget the cheese!

Costa Vida Roasted Vegetable Sauce:

¼ cup olive oil
½ lb. jalapenos, halved and seeds removed
½ lb. yellow onions, peeled and quartered
1/8 cup fresh garlic cloves, peeled
¼ cup sugar
Pinch of cumin
1 Tbsp. Kosher Salt
½ qt. carbonated cola
1 qt. chicken stock
2 small cans of green chiles

Toss the jalapeños, onions, and garlic in the sugar, oil, and spices. Spread on a sheet tray and roast in a 350-degree oven for 30-45 minutes or until the veggies are nice and caramelized. Set aside.

Combine the cola and chicken stock in a saucepan and bring to a boil. Reduce to a simmer and add the roasted veggies. Using an immersion blender, puree the veggies and broth until the veggies are roughly chopped. Bring the mixture to a simmer and reduce until the sauce is slightly thickened.

Add the canned chiles and taste. Add more sugar if you prefer a sweeter sauce. Keep the sauce warm and use it to smother your homemade burritos and enchiladas.
