Costa Vida Chocolate Chip Cookie Recipe
December is the month for cookie exchanges. There are so many different holiday cookies, you could bake one recipe every day this month and still not get through them all! At Costa Vida, we bake our signature Chocolate Chip Cookies at our restaurants year-round, but we especially love seeing guests share them with neighbors, the office, and family during the holiday season. While there are so many craveable cookies available during the holidays, in our kitchens we like to keep things clean and simple with the classic Chocolate Chip Cookie.
We bake these cookies each morning at Costa Vida and delight our guests with our fresh take on the classic American cookie. The soft, buttery cookie blends a hint of almond with melty, rich chocolate morsels for a treat that takes you back to your childhood. Costa Vida Chocolate Chip Cookies
makes 6 dozen
¾ cup sugar
1 cup brown sugar
1 cup unsalted butter, room temperature
1 Tbsp almond extract
2 large eggs, slightly beaten
3 cups flour
¾ teaspoon baking soda
¾ teaspoon kosher salt
3 cups semi-sweet chocolate chips
1 cup walnuts or pecans, chopped (optional)
Preheat oven to 350 Degrees
In a stand mixer with a paddle attachment, cream together butter and sugars until light and fluffy, 2-3 minutes. Scrape the bowl with a rubber spatula, then mix in the eggs and almond extract.
Combine flour, baking soda, and salt together in a medium mixing bowl. With the stand mixer on low speed, gradually add dry ingredients to the butter/sugar mixture. Scrape the bowl once more and gently fold in the chocolate chips and nuts (if using). Chill the dough for at least 30 minutes.
When ready to bake, scoop the cookies onto a Silpat or parchment paper-lined cookie sheet. Bake for 10-12 minutes until golden brown on the edges. Share and enjoy!
